Prawns with asparagus

Stir-fried prawns with asparagus and baby sweetcorn is one of my favourite dishes as asparagus is my favourite vegetable. It is not easy to find asparagus in normal restaurant or street food stalls. So you need to go to quite good restaurant for this dish. When preparing all ingredients next to you when cooking, you can finish this dish within 5-7 minutes. The taste is so fresh and vegetables are very crusty as we quickly stir-fry this with high heat.
- 100 grams prawns
- 5-10 slices chicken
- 2 tablespoon oyster sauce
- 2-3 cloves garlic
- 125 grams asparagus
- 80 grams baby sweetcorn
- 2 teaspoon light soy sauce
- 1 teaspoon dark soy sauce
- 2 teaspoon Maggi sauce
- 2 teaspoons Chinese rice wine
Step by Step Instructions
Heat the oil in a wok then sear prawns just until they change colour. Put them aside.
Heat up the same wok and now gently brown the garlic. Then add the asparagus.
Stir-fry, for a few seconds, the asparagus with a high heat. Then let them sit still for just 10-15 seconds.
Maintaining a high heat, add all the liquids, and the baby sweetcorn. Mix the dish will ensuring everything is coated in sauce. You could add chillies at this point if you like spicy food.
Now you can add some water in. around 1.5 tablespoon. (I like to measure water in the same cup that we use to put sauce.) Then leave them around 10-15 seconds.
When the colour of the vegetables changes – they become noticeably vibrant – add the prawns we cooked earlier. Mix quickly.
Allow the sauce to thicken a little, then turn off the heat and serve immediately.
